The Best Thing About Being Vegetarian

It might come as a surprise for my meat-eating friends, but the best thing about being vegetarian is The Food! Although I think that gave it away considering the collage I’ve made.

I wrote a post about being vegetarian 3 years ago and pretty much everything is the same. The only thing that changed is that now I have a pair of off road trainers and I don’t need hiking boots. All my shoes are faux leather.

The only regret is the same, not turning vegetarian sooner. As I said, for me, the best thing is the food. I love food, I love cooking, I love baking, I love watching TV shows (even though usually they cook meat, I can find an interesting idea on the veggies they use). It’s a passion that evolved in time and most of it after I was free of the idea of cooking meat. I was looking for recipes before, but looking for vegetarian recipes is more fun; there are so many different ingredients that I can use. Cooking became exciting.

The Best Thing About Being Vegetarian

In the post I wrote 3 years ago I made a list of veggies I eat and now this is even bigger because I actively looked for new veggies. I should add: cavolo nero, green kale, okra (now I found a shop that sells it), samphire, rhubarb, asparagus, turnip, fennel. Some of them I tried before and didn’t like, but I found a way to cook them that I love and I would eat them again and again.

I went from salt, pepper and a few herbs to using more than 30 spices to add flavour to my food. Beside the ones on the racks I have a couple in the cupboard and I’m really considering getting another rack for spices.

One can wonder if I wasn’t able to do that before, while I was eating meat. Of course I could, but I didn’t, like so many people who are asking themselves “what should I have for dinner?” and come up with the same couple of dishes. I know how it feels, I’ve been in that situation.

Beside this, there are many more reasons to be happy I’m vegetarian. I feel better even when I don’t exercise and I don’t watch my diet as I should. I know I’m stronger and healthier. It was one of the best decisions I took.

  1. YAY – Go vegetarians! I’ve been vegetarian for 20 years now (it was my ‘anniversary’ on new years day) and I haven’t looked back. People think that vegetarians literally eat salad or pieces of broccoli for dinner, but it couldn’t be further from the truth. I have a varied and mixed diet that is changing all the time.

  2. I absolutely love Cavalo Nero! I’d really like to grow it when I have my own house- wish I’d planted some this winter- it grows on my friend’s allotment like a weed!
    My husband has always cooked with lots of herbs but since we went on a yogic vegetarian Indian cooking day, we’ve used a lot more spices- he cooked cauliflower yesterday with coconut oil (which is in the Holland and Barratts’ penny sale!) ,tumeric, cinnamon, fennel seeds, cumin seeds, vegetable stock and it was beautiful!x

  3. I’ve never tried cavolo nero or samphire, but I LOVE okra and kale! All these dishes look amazing, you’re right, the best thing about being a vegetarian is the food!! I really regret not becoming vegetarian sooner, too :( especially with how easy it has been and how much I love this lifestyle. But let’s look on the bright side, better late than never.   4. I was a vegetarian for around a year, and though I did eventually start eating meat again, where possible I do avoid it. My dad has been a vegetarian for a least 30 years and when we go to a restaurant, his food is always much more exciting! As you said, with meat, it becomes easy to stick to the same couple of dishes and not try anything new. All the photos of the food look delicious!
