What’s cooking #3

This is my third what’s cooking update this year. I love doing these updates as some of the dishes aren’t suitable for my food blog because they aren’t recipes, but just a few ideas of combining flavours.

I made a leek, broccoli and potato bake that was delicious. I still have to make some adjustments to the recipe before I’m going to post it on my food blog.

Duck-egg-roasted-potatoes

Roasted potatoes with a boiled duck egg. I loved the duck egg, it’s so rich and it has a very intense flavour. I will try to prepare the duck eggs in other ways too, like steam-fried. I never tried to steam-fry before, so I’m not so sure how it will be.

Matcha pancakes. I’m still cooking with matcha as much as I can, it has a lovely flavour. I had the pancakes with homemade grape jam.

Nachos with a little bit of cheese on top with homemade guacamole and homemade tomato dip. I love this combination. Guacamole is so easy to make, it takes only a couple of minutes in the food processor. The tomato dip is easy to make too, I’m using a can plum tomatoes and a small can of tomato paste, mixed together with lots of spices and herbs and cooked in a pan until it reduces a little.

A quorn peppered steak with mushrooms and Stilton side dish. I think the flavours go together nicely.

vanilla-smoothie

A simple and delicious vanilla smoothie. This summer I might take the Smoothie challenge again, a smoothie each day in June. Last year I didn’t manage to finish it, but I’m sure this year I will.

Today I plan to make Tikka Masala with swede and broccoli and shop bought sauce. I don’t have lots of time to make it from scratch. I’m also thinking of some jacket potatoes with baked beans and a few cheddar strings on top. Most likely I will take pictures and show them in the next What’s cooking update, next month.

  1. We had some duck eggs recently from a friend and they were really tasty! I tend to make omelette with them but the scrambled egg was delicious too!!!

  3. Oh yum, this all looks delicious! I love nachos and cheese with a sour cream dip and the duck egg dish looks wonderful.

  5. I love your presentation of the barely-boiled egg on top of the potatoes. It’s been a long time since our landlady use to give us duck eggs – they were so wonderful!

  6. All of these look delicious, the roasted potatoes and duck egg especially! We’ve been eating a lot of Mexican lately: beef tacos and chicken fajitas. And I eat chips and salsa quite a bit!

  7. I love me some nachoes! I’ve never tried a duck egg actually, they sound amazing. I need to cook more often!

  8. I have a top tip for you and it’s going to change your life. Next time you make a pasta/potato bake, bash up a packet of crisps and sprinkle on the top before cooking. Such a lovely, crunchy texture it gives it!
